Does any one know a tool to catch data like Fiddler or Firebug for the iPad?

I wrote a piece about using httpScoop on the Mac to analyse HTTP Traffic over your iPAd this earlier this year.

This is basically what Karl has mentioned but for the Mac. This also allows the analysis of non-browser based apps.
We also pass a hashed DID value to anonymously but uniquely identify our test devices which allows us to test ads in live apps rather than having to have separate test/ad builds for us. Makes life a lot easier.
If you are troubleshooting ads on apps, I also use the Phone Configuration Utility for Windows for both the iPhone and the iPad.
For mobile sites, I use the user agent switcher:

You can also use Firebug on your iPad if you'd like. You just have to install the Firebug Lite Bookmarklet.

You can actually use Fiddler on your PC/MAC and sniff iPad app traffic by connecting and then using your Desktop's wifi as a proxy. I'm on a plane right now but can send the setup details along a bit later if you are interested.
Certainly not a perfect solution but helpful for troubleshooting apps.

Would love to know, too. If you have a simulator build of an app, you can run it in on your Mac and check HTTP info that way with any tool, but getting sim builds is a PITA.
